Preparation steps

1.

Rinse the raspberries and put them in a large container. Pour vinegar over them and leave tightly sealed in a warm place for at least 10, preferably 14 days, gently swirling the jar twice a day.

Then strain the liquid through a clean cloth (like a cheesecloth) or a very fine mesh strainer, squeezing the raspberries to extract all of the flavor. Pour into a bottle rinsed with boiling water. Store in a cool dark place. The raspberry vinegar will keep for several weeks.
