2 Grapefruit
1 Cucumber
1 large lemon
¾ cup Sparkling water (chilled)

Preparation

Preparation steps

1.

Rinse mint, shake dry, pluck leaves and cut into strips.

2.

Squeeze out juice from the grapefruits. Pour the juice into a tall vessel.

3.

Rinse cucumber thoroughly and wipe dry. Cut a small piece (approximately 2 inches) into thin slices.

4.

Halve remaining cucumber lengthwise, remove seeds with a teaspoon, cut flesh into cubes and add to vessel. 

5.

Rinse lemon in hot water and wipe dry. Cut 1/3 of the lemon into thin slices. Squeeze out juice from remaining lemon and add to the vessel. 

6.

Puree cucumber mixture with an immersion blender until smooth. Pour into a punch bowl or pitcher and top with mineral water. Stir to combine, garnish with cucumber slices, lemon slices and mint and serve immediately.
