- 18 ozs dried chickpeas (garbanzo beans)
- 2 red Bell pepper (diced)
- 4 scallions (sliced)
- 2 Oranges (juice)
- 1 Orange (segmented)
- 4 Tbsps white wine vinegar
- 2 Tbsps lemon juice
- 6 Tbsps olive oil
- salt
- peppers
- To garnish
- parsley

Preparation steps
1.
Put the chickpeas into a large pan and cover with water. Bring to a boil and simmer for 1 1/2 hours until tender. Drain and set aside.
2.
Mix together the remaining ingredients and stir in the chickpeas.
3.
Divide between serving bowls and garnish with parsley.
