You are probably familiar with most of the ingredients in this tropical fruit salad, except for maybe starfruit. Starfruit, also known as Carambola fruit, is anti-inflammatory, heart-friendly, promotes weight loss, regulates blood pressure, boosts digestion, is diabetic-friendly, may improve the metabolism, and helps reduce cholesterol levels. This lesser-known fruit deserves some more recognition! 

Feel free to substitute more fruits or berries of your choice, depending on what you prefer! You can also replace the cantaloupe with watermelon for a fun, summery twist!

1 handful Kumquat
200 grams Strawberries
1 Passion fruit
1 Star fruit
6 Dried dates
1 lemon (squeezed)
2 Tbsps Sunflower seed

Preparation steps

Rinse the melons and cut a lid from each. Hollow melons carefully, leaving about 1 cm (approximately 1/2 inch) border of flesh in the halves. Cut the scooped melon flesh into bite-sized pieces, set aside 3/4 of the flesh for the salad and save the remaining for another use. Rinse, trim and quarter the strawberries.

Rinse the star fruit and slice. Rinse the guava and cut into slices. Slice dates in half lengthwise. Rinse the grapes, halve and remove seeds. Rinse kumquats and halve. Cut passion fruit in half and spoon out the pulp. Combine pulp with the prepared salad ingredients.

Peel the kiwis, cut into quarters and then cut into slices. Add to the fruit mixture. Fold in lemon juice and spread over the hollowed melon halves. Serve sprinkled with sunflower seeds.
