Preparation steps

1.

Brush the endives and cut out the bitter core. Leave the small endives whole and halve the bigger ones.

Blanch the tomatoes for a few seconds, rinse cold, peel, quarter, core and dice.

Heat about 1/2 liter of water (approximately 2 cups) with a pinch of salt in a saucepan. Place the endives in it, cover and cook for 5 minutes.

Lift out, drain and serve on plates with the tomato cubes.
