4 pumpkin seed rolls
4 eggs
1 handful mixed Lettuce (such as radicchio, arugula, frisee lettuce)
100 grams Quark
1 Tbsp scallions
salt
peppers

Preparation steps

1.

Cut rolls in half horizontally. Boil eggs for about 10 minutes or until hard. Remove from heat, cool, peel and cut into quarters. Rinse lettuce, drain, trim and pluck into smaller pieces.

2.

Stir quark until creamy. Add chives and season with salt and pepper. Spread onto bottom bun halves, top with lettuce and eggs and finish with top bun halves. Serve.
