Preparation steps

Peel garlic and shallot and coarsely chop. Rinse the chile, halve, remove seeds and chop. Crush coriander root, lemon grass, cumin and turmeric in a mortar and pestle to form a paste.

Cook the paste in hot oil until it is fragrant and deglaze with broth. Allow to simmer, then add coconut milk and simmer another 10 minutes until slightly creamy. Season with salt to taste.
