- 40 grams Pastry flour
- 200 milliliters Coconut milk
- 300 milliliters Whipped cream (min. 30% fat)
- 2 tsps Curry powder
- 1 tsp Turmeric
- 1 generous pinch Lime zest
- ½ sprig Lemongrass
- salt

Preparation steps
1.
Melt butter in a pan, add flour and whisk together, taking care to avoid clumping.
2.
Deglaze the pan with half the coconut milk, continuing to whisk. Add remaining coconut milk and stir vigorously to prevent lumps from forming.
3.
Stir in whipping cream, add spices and bring to a boil while continuing to stir. Remove the lemongrass stalks from the mixture and season with salt to taste.
