For the crepes
125 grams Pastry flour
1 pinch salt
300 milliliters milk
2 medium eggs
2 Tbsps clarified butter
For the filling
2 carrots
200 grams Double cream cheese (60-75% fat)
2 Tbsps Buttermilk
1 tsp Lemon peel

Preparation steps

1.

For the crepes, mix flour, salt, milk and eggs to a smooth batter. Let batter stand for 15-20 minutes. In a nonstick skillet, successively fry batter into 4 crepes in clarified butter.

For the filling, mix double cream, buttermilk and lemon zest and season with salt and pepper. Rinse basil, shake dry and set aside some leaves for garnish. Finely chop remaining basil and mix into filling.

Rinse and halve tomatoes. Peel carrot and grate finely. Fill crepes with tomatoes, carrots, turkey sausage and basil cream mixture. Garnish crepes with basil leaves to serve.
