2 Tbsps olive oil
3.333 cups floury potatoes (chopped)
1 onion (chopped)
1 clove garlic cloves (chopped)
cup Celeriac (chopped)
1 bay leaf
3 ½ cups Meat stock (approx.)
cup cream (min. 35% fat content)
½ cup Crème fraiche
Nutmeg (freshly ground)
For the salsa
1.333 cups Chorizo (sliced)
0.333 cup black Olives (pitted, chopped)
2 cups parsley (stalks removed, chopped)

Preparation steps

1.
Heat the oil in a pan and fry the potato, onion, garlic and celeriac briefly; do not let them brown. Add the bay leaf, pour on the stock and cover. Simmer gently for approx. 30 minutes.

Purée the soup finely. If too thin, boil to reduce; if too thick, add more stock. Stir in the cream and

creme fraiche and season with salt, ground black pepper and nutmeg.

Fry the sliced chorizo briefly in a non-stick pan. Mix in the olives and the parsley leaves.
5.
Serve the soup in bowls, garnished with the salsa.
