- 1 cup chopped, drained, oil-packed sun-dried tomatoes
- 2 cups Tomato juice
- 2 cups heavy whipping cream
- salt (to taste)
- freshly ground Black pepper (to taste)
- ½ cup seasoned Crouton (for garnish)
- 3 Ricotta cheese (for garnish)
- ¼ cup prepared Pesto (for garnish)

In the bowl of a food processor, puree the sun-dried tomatoes. Remove 1/4 cup and set aside for garnish. Add 1 cup of tomato juice and puree until smooth.

In a large saucepan, combine remaining cup of tomato juice and pureed mixture; bring mixture to a boil, stirring frequently. Remove from heat and add cream; season to taste with salt and pepper.
3.
Return to burner, cook over low heat until heated thorough, do not boil.
4.
Ladle into serving bowls, garnish with croutons, a dollop of ricotta, pesto and reserved sun-dried tomatoes. Serve.
