4 Tbsps vegetable oil
1 onion (chopped)
2 cloves garlic cloves (chopped)
1 tsp ground Cumin
1.333 cups Cauliflower
2 medium potatoes (peeled and roughly chopped)
4 cups chicken stock (or vegetable stock)
cup cream
Crème fraiche (to garnish)
Chives (to garnish)

Preparation steps

1.
Heat the oil in a large pan and gently cook the onion until soft. Add the garlic and the cumin and cook for 2 more minutes.
2.
Add the cauliflower and potatoes and stir so they are coated with the oil. Pour over the stock, bring to a boil and simmer until the cauliflower and potatoes are tender.
3.
Puree the soup and pass through a fine sieve - this will give the soup a velvety texture - then add the cream, season with salt and pepper and reheat gently.
4.
Serve the soup with a blob of creme fraiche and snipped chives to garnish.
