¼ cup sugar
½ cup water
½ lemon (juice and pared zest)
7 ozs mixed Fruit (cherries, sliced peaches, orange segments)
cup Greek yogurt
vanilla extract
2 Tbsps brown sugar

Preparation

Preparation steps

1.
Put the sugar, water, lemon juice and zest into a pan. Bring to a boil, then simmer for 4-5 minutes until it forms a thin syrup. Remove the lemon zest and set aside to cool.

Pour the syrup over the prepared fruit and chill for 2-3 hours.
3.
Put the fruit in 2 heatproof glasses or dishes and spoon over the yoghurt to cover the fruit.
4.
Heat the grill to its highest setting.
5.
Put the dishes on a grill tray and sprinkle each with 1 tablespoon demerara sugar. Grill for about 2 minutes, until the sugar has melted and caramelised. Serve immediately.
