250 milliliters Coconut milk
1 pinch salt
1 tsp butter
½ tsp Lime zest
40 grams sugar
125 grams Arborio rice
For garnish

Preparation steps

Pour the milk with the coconut milk into a saucepan. Add the salt, butter, lime zest and sugar. Bring to a boil, stirring occasionally.

Add the rice to the milk and bring to a boil while stirring, then turn the heat down to the very lowest setting.

Cover the pot with a lid and let the rice pudding cook for 40-45 minutes, depending on the type of rice. During this time do not open the lid. Serve garnished with lime peel and coconut flakes.
