4 Tbsps honey (or more depending on taste)

Preparation steps

Wash the oranges and lemons well and finely grate the peel of 2 of each. Squeeze all the fruit. Put a little juice into a pan with the honey, lemon peel and ginger and briefly bring to the boil. Strain through a sieve into the rest of the juice, mix and taste. Transfer to a shallow dish. Freeze for at least 4 hours, stirring several times with a fork during this time.

When the granita has frozen into crystals, spoon into glasses and serve.
