¾ cup caster sugar
½ cup unsalted butter (cubed)
0.333 cup double cream
2 Tbsps honey
1 ½ cups sliced almonds
2 Tbsps all-purpose flour
2 Tbsps rolled oats
1 tsp freshly grated lemon zest
1 Tbsp mixed, chopped candied citrus peel
1 cup Shredded coconut
cup glace Candied cherry (chopped)
2 cups chopped Dark chocolate
1 tsp liquid Glucose

Preparation steps

Preheat the oven to 180°C (160° fan) / 350F / gas 4. Grease and line a large baking tray with greaseproof paper.

Heat together the sugar, butter, cream and honey in a large saucepan set over a moderate heat. Remove the saucepan from the heat and stir through the almonds, flour, oats, lemon zest, mixed peel, shredded coconut and half of the cherries.

Leave the mixture to cool for 15 minutes before taking tablespoons of the batter and spooning mounds onto the prepared tray. Flatten the mounds with a wetted finger and bake for 10–12 minutes until golden on top.

Remove the tray from the oven and leave to cool on a wire rack. Melt together the chocolate and glucose in a heatproof bowl set atop a half-filled saucepan of simmering water. Stir until melted before removing from the heat.
5.
Carefully peel away the Florentines from the tray and dip their undersides in the melted chocolate.
6.
Chill the dipped Florentines on a wire rack, with the chocolate-side facing up, for 15 minutes. Garnish with the remaining chopped cherries before serving.
