2 Tbsps Rice vinegar
1 ½ Tbsps soy sauce
1 Tbsp Chinese 5 spice powder
1 Tbsp soft dark brown sugar

Preparation steps

1.
Place the duck on a wire rack skin side up and dry thoroughly with kitchen paper. Score the skins with a sharp knife.
2.
Mix together the ingredients and brush the skin and leave to marinate for about 30 minutes.
3.
Preheat the oven to 190°C | 375F | gas 5.
4.
Brush the duck all over with the sauce and transfer the wire rack to a roasting tin. Pour a cup of water into the bottom of the tin and roast/steam for 30 minutes until the duck is cooked through and the skin is crisp.
5.
You can quickly grill the skin if it hasn’t crisped up. Serve with rice or pancakes.
