Ingredients

For the marinade
1 Tbsp salt
½ tsp 5 spice powder
½ tsp sichuan pepper
2 tsps White pepper
1 Star anise (crushed)
1 tsp sugar
6 cups strips Pork belly (cut into bite size chunks)
For the stir fry
cup Peanut oil
4 red peppers (seeds removed and cut into strips)
4 cloves garlic cloves (crushed)
3 Tbsps sichuan chili paste
2 Tbsps yellow Bean sauce
2 tsps caster sugar (superfine)
1 Tbsp dry sherry
3 scallions (each cut into 5)

Preparation steps

1.
Mix the dry ingredients for the marinade, rub the mixture into the pork belly pieces and leave to marinade for 2 hours.
2.
In a wok or large, heavy skillet, heat the oil until smoking, add the pork belly pieces and the marinade ingredients and stir-fry for 6 - 8 minutes or until lightly browned.
3.
Add the peppers and garlic to the pan, stir-fry 1 minute then add the chilli paste, yellow bean sauce, sugar and sherry and stir about 1 minute.
4.
Add the scallions and stir no more than a few seconds. Serve hot.
