Ingredients

- For the kebabs
- 4 Chicken thigh (skinned, deboned and chopped)
- 1 red chili pepper (finely chopped)
- 2 tsps dried oregano
- ½ lemon (juiced)
- 2 Tbsps olive oil
- salt

- 2 Tbsps olive oil
- 1 medium Zucchini (cut into thin batons)
- 1 red pepper (seeded and sliced)
- 1 yellow pepper (seeded and sliced)
- 1 Tbsp balsamic vinegar
Preparation steps

Marinate the chicken in a bowl with chilli, oregano, lemon juice and oil for 30 minutes.

Heat the oil in a pan and saute the vegetables until just tender, then toss in the balsamic vinegar. Season and keep warm.
3.
Thread the chicken onto soaked wooden skewers, then griddle over high heat for 6-8 minutes until cooked through and golden.
4.
Serve the kebabs with the balsamic glazed vegetables.
