- 1 pkg Baby spinach (rinsed and trimmed)
- 1 small Red onion (peeled and thinly sliced)
- 1 cup fresh Cherry tomatoes (halved)
- 8 slices cooked Bacon (roughly chopped)
- For Dressing
- ½ cup olive oil
- ¼ cup Red wine vinegar (or sherry vinegar)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
Preparation steps

Place spinach, sliced onion, tomatoes and bacon in a salad bowl. Toss to mix.
