3 Tbsps butter
3 ¼ cups Leeks (finely sliced)
2 Tbsps flour
2 cups chicken stock
1 cup milk
cup soft Blue cheese
1 Tbsp finely chopped Dill

Preparation steps

1.
Melt the butter in a pan and gently cook the leeks for about 5 minutes.

Sprinkle over the flour and cook for a further 2-3 minutes. Gradually add the stock and the milk, stir well, then cover and simmer over a low heat for about 15 minutes.
3.
Dice the cheese, add to the soup and let it melt slowly. Season the soup with the dill, salt and pepper. Ladle into warmed soup cups and serve scattered with croutons.
