2 tsps runny honey
4 Tbsps extra virgin olive oil

Preparation steps

To make the dressing, put the vinegar and honey in a bowl with a pinch of salt and pepper and whisk with a fork until dissolved. Incorporate the oil then taste the dressing and add more seasoning if necessary.

Cut the tomatoes and mozzarella into 1 cm slices and arrange on four serving plates. Roughly tear the basil and scatter over the top then sprinkle with freshly ground black pepper.
3.
Serve the salad immediately with the dressing on the side.
