- 1 cup Spelt flour
- 1 tsp Baking powder
- 0.6666 gram Raw cane sugar
- 1 pinch salt
- 1 stick butter (softened )
- 3 Banana (ripe)
- 1 egg
- 1 cup robust Oats
- ¼ cup slivered almonds
- 1 Tbsp Cocoa
- 2 Tbsps Chocolate chip
Preparation steps
preheated oven to 200 °C/400 °F (convection 180 °C/375 °F). In the bowl of a stand mixer, mix flour with baking powder, sugar and 1 pinch of salt. Add butter in pieces and mix. Peel the bananas, mash them with a fork and add them to the bowl together with the egg and mix well. Fold in oat flakes, almonds, and half of the chocolate chips.
Line a baking sheet with parchment paper. Use a tablespoon to drop the dough onto the baking sheet leaving enough space between the cookies. Sprinkle with remaining chocolate chips and bake for 10-15 minutes. Then let it cool down on a cooling rack.
