9 ozs beets (precooked, vacuum packed)
1 tsp lemon juice
6 ozs fresh goat cheese
2 Tbsps olive oil

Preparation steps

1.

Roast pine nuts in a hot pan without fat over medium heat. Then let cool for about 5 minutes. Meanwhile, wash thyme and shake dry; pluck leaves from 2-3 twigs and chop finely.

Finely chop beet tubers and puree with lemon juice, fresh goat cheese, 1 tablespoon oil and toasted pine nuts.

3.

Mix in chopped thyme and season everything with salt and pepper. Drizzle dip with remaining oil and garnish with thyme sprigs.
