4 Tbsps Fish sauce
1 tsp unrefined brown sugar
1 red chili pepper (deseeded and finely chopped)
3 cups flaxseed
2 eggs (lightly beaten)
2 cups Shredded coconut
24 large Prawn (shelled with tails left on)

Preparation steps

1.
Mix together the lime juice, fish sauce, sugar and chilli to make the sauce.
2.
Heat the oil in a deep pan until smoking.
3.
Meanwhile, place the eggs in a shallow bowl and the coconut in a flat plate. Deep the prawns into the beaten eggs then dip into the coconut until thoroughly coated.
4.
Deep dry the prawns in batches in the oil until they are lightly browned. Drain on kitchen paper and serve with the sauce alongside.
