1.333 cups white whole wheat flour
½ cup Bran
3 Tbsps soft brown sugar
2 tsps baking soda
cup raisins
cup milk
1 large egg
0.333 cup sunflower oil
2 ripe Banana

Preparation steps

1.
Heat the oven to 200C (180C fan oven), 400F, gas 6. Line a 12 whole muffin tin with paper muffin cases.
2.
Mix the flour, bran, sugar, baking soda and raisins together in a bowl.
3.
In a jug lightly whisk together the milk, egg and sunflower oil with a fork.
4.
Pour the wet ingredients into the dry ingredients and stir gently together until just blended.
5.
Peel and mash up the bananas with a fork and gently stir into the muffin mixture.
6.
Spoon the mixture evenly between the paper muffin cases.
7.
Bake for 20-25 minutes or until a cocktail stick inserted into the centre of the muffin comes out clean.
