Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Rinse, trim, and cut the rhubarb into pieces 15 cm (approximately 6 inches) long. Add to a baking sheet lined with parchment paper. Rinse the orange in hot water, pat dry, and grate the peel. Squeeze the juice, mix with the zest and honey, and drizzle over the rhubarb. Cut the vanilla bean in half lengthwise and add to the rhubarb. Bake for about 15 minutes, or until soft.

Remove from oven. You can serve while still warm or cooled.
