1 kilogram waxy potatoes
1 sprig rosemary
4 sprigs thyme
200 grams Bacon
2 Tbsps clarified butter
1 Tbsp freshly chopped parsley
freshly ground peppers

Preparation steps

1.

Peel the potatoes and cut in half lengthwise. Boil in salted water for about 20 minutes until soft but not done. Remove from the pot and allow to cool slightly.

Remove the rosemary and thyme stems, then chop the leaves. Sprinkle the herbs over the potatoes, then wrap them with the slices of bacon (so that the herbs are inside).

3.

Slowly fry the wrapped potatoes in a skillet with hot butter until golden brown, about 10 minutes. Turn them from time to time and season with salt and pepper. Serve garnished with parsley.
