2 Tbsps Raw cane sugar
3 ozs ground almonds
½ tsp cocoa powder
1 pinch cinnamon
2 ozs Popped amaranth

Preparation steps

1.

Cut dates in half and remove pits. Chop into small pieces.  

2.

Separate eggs. Using a hand mixer, beat egg yolks and sugar in a bowl until creamy.  

3.

In another bowl, beat egg whites until stiff. 

4.

Mix almonds, dates, cocoa powder, 1 pinch of cinnamon and popped amaranth into the egg yolk mixture. Carefully fold in the beaten egg whites.

5.

Line a baking sheet with parchment paper and use a spoon to scoop 24 small mounds onto the baking sheet.  Bake in a preheated oven at 300°F until cookies are dry to the touch, about 25-30 minutes.

6.

Let cool on a wire rack. Serve 3 macaroons as a meal. Keep the remaining macaroons in an airtight container and consume within 10 days.
