Preparation steps
1.
Preheat oven to 200°C | 400F | gas 6.
2.
Open the trout up and place 2 sage leaves, a slice of lemon, and smear 1 tbsp of butter inside the main cavity. Season well.
3.
Wrap 4 slices of bacon around each trout and place in a roasting tin. Drizzle with olive oil and bake for 20 minutes or until the bacon is crisp and golden.
4.
Serve at the table with simply boiled buttered potatoes.
