- 18 ozs fresh Wild mushroom (rinsed and chopped)
- 1 finely chopped shallot
- 2 Tbsps butter
- 1 Tbsp Pastry flour
- 26 ozs Chicken broth
- 8 ozs Crème fraiche
- salt
- freshly ground peppers
- 1 Tbsp lemon juice
- 2 Tbsps freshly chopped parsley
Preparation steps

Sweat the shallots in hot butter until translucent. Add the mushrooms and saute over high heat for about 2 minutes. Sprinkle with the flour and stir well. Saute for 2-3 minutes. Pour in the broth. Simmer for about 10 minutes.

Stir in the creme fraiche and briefly boil. Season with salt, pepper and lemon juice. Serve sprinkled with parsley.
