For the white chocolate
7 ozs Dried Fruit (e. g. apricots, pineapple, candied peel, chopped)
14 ozs white chocolate (chopped)
For the dark chocolate
½ cup chopped Walnut
½ cup chopped Hazelnuts
¾ cup chopped almonds
7 ozs Dark chocolate (70% cocoa solids)
7 ozs Milk chocolate (35% cocoa solids)

Preparation

Preparation steps

1.
Line 2 baking tins with non-stick baking paper.
2.
For the white chocolate: melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat. Stir in the fruits and pour into 1 tin. Leave to set.
3.
For the dark chocolate: toast the nuts in a dry frying pan until golden.
4.
Melt the chocolate as before and stir in the nuts. Pour into the other tin and leave to set.
5.
Cut into pieces when set.
