3 ½ ozs white Chocolate (vegan)
9 ozs Pastry flour
2 tsps Baking powder
3 ½ ozs ground Pecan
1 pinch salt
1 generous pinch Vanilla bean
3 Tbsps candied Pineapple
1 Banana (7 ounce with peel)
1 Tbsp lemon juice
3 ½ ozs Soy yogurt
3 ½ ozs sugar
5 ozs Soy cream
1 Tbsp Vanilla sugar
Pecan (for garnish)

Preparation steps

Melt the butter. Crumble the chocolate and melt over a hot water bath, stirring constantly. Let the chocolate cool. Line a springform pan with parchment paper. Preheat the oven to 180°C / 350°F.

Mix the flour, baking powder, nuts, salt and vanilla paste. Chop the pineapple finely. Puree the banana and lemon juice. Mix the yogurt and sugar. Mix the butter, chocolate, banana puree and yogurt mixture. Quickly stir in the flour mixture and the pineapple chunks. Pour the batter into the pan. Bake for about 45 minutes, until a toothpick inserted into the center comes out clean. Remove and cool briefly. Remove from the pan and cool completely on a wire rack.

Cut the cake horizontally into 3 floors. Beat the soy cream with the vanilla sugar until stiff. Stack the cake floors, separated by a layer of the soy cream. Serve garnished with pecans.
