- 3 Tbsps vegetable oil
- 3 cups unsmoked Bacon (cubed)
- 1 ⅔ cups Pork sausage (sliced)
- 2 onions (roughly chopped)
- 2 stalks Celery (roughly chopped)
- 3 cups potatoes (peeled and cut into large chunks)
- 1 Tbsp fresh thyme
- 1 tsp mustard powder
- 1 bay leaf
- 3 cups chicken stock
- 1 Tbsp chopped parsley

Heat the oven to 180°C (160º fan) 350ºf, gas 4. Heat the oil in a deep ovenproof dish on the hob and gently cook the bacon and sausages until they are lightly browned.

Stir in the onions, cook for 2 minutes then add the celery, potatoes, thyme leaves, mustard powder and bay leaf.

Pour over the chicken stock, season with salt and pepper, stir well then cover with a lid or kitchen foil and transfer the dish to the oven. Cook for about 1 1/2 hours, stirring from time to time, or until the meats are cooked through.
4.
Serve the stew scattered with the chopped parsley.
