Lycopene, a natural colouring agent, is responsible for the beautiful red colour of tomatoes. Why does lycopene make tomatoes so healthy? Lycopene has an antioxidant effect, i.e. it traps free radicals in the body, which are responsible for the development of many diseases.

To benefit from the healthy effects of tomatoes, you don't necessarily have to eat the vegetables fresh. Lycopene, unlike many vitamins, is relatively insensitive to heat. Thus, canned tomatoes and tomato paste sometimes contain even more lycopene than fresh tomatoes.

1 kilogram Beefsteak tomato
2 onions
1 chili pepper
1 tsp Mustard seed
2 allspice
1 cloves
1 pc Cinnamon stick (about 2 cm)
salt
3 Tbsps Wine vinegar
2 Tbsps sugar
lemon juice
freshly ground peppers

Preparation steps

Blanch the tomatoes in boiling water for a few seconds, then rinse under cold water. Quarter and coarsely chop the tomatoes.

Peel and dice the onions. Rinse the chili and halve lengthwise. Remove the seeds and membranes, and finely chop. Add the cloves, mustard seeds, allspice berries, and cinnamon to a spice bag or cheesecloth and tie with kitchen twine.

Mix the tomatoes with the onion, chili, 1 teaspoon of salt, the vinegar, and the sugar and bring to a boil. Simmer for 45 minutesover low heat, stirring occasionally. Remove the spice bag, and season the chutney to taste with salt, lemon juice, and pepper.

4.

Fill the chutney into prepared jars, and seal tightly. Store the chutney for 4 weeks in a dark and cool place before using.
