4 ripe Tomatoes (cored and diced)
2 shallots (peeled and finely sliced)
4 Tbsps extra-virgin olive oil
4 sprigs cilantro

Preparation steps

Heat the oil in a pan and fry the chicken briskly, sprinkling over the garam masala and tossing the chicken to coat. Season and set aside when cooked through, 8-10 minutes.
2.
Spoon tomato, shallots and chicken into small serving glasses. Drizzle over a little oil and serve decorated with coriander.
