- 1 cup Basmati rice
- 3 Tbsps sesame oil
- 2 cloves garlic cloves (finely chopped)
- 1 onion (finely diced)
- 2 tsps freshly grated ginger
- 1 red chili pepper (deseeded and seeds removed)
- ½ Lime (juice and finely grated zest)
- 3 ½ cups Coconut milk
- 1.333 cups peas (frozen)
- 18 ozs turkey breasts (cut into short strips)
- salt
- brown sugar
- soy sauce
- To garnish
- cilantro
Preparation steps
1.
Cook the rice in boiling salted water according to the packet instructions.

Heat 2 tablespoons sesame oil in a wok or a large frying pan. Add the garlic, onion, ginger, chilli and lime zest and cook gently for 1 minute.
3.
Add the coconut milk and cook for about 10 minutes over a low heat until reduced slightly. Add the frozen peas after 5 minutes.
4.
At the end of the 10 minutes add the turkey and cook very gently in the sauce for a few minutes until the meat is cooked. Add salt, sugar, lime juice and soy sauce to taste.
5.
Serve the turkey with rice and garnish with coriander.
