12 fresh Zucchini flower
2 scallions
1 garlic clove
2 Tbsps olive oil
6 ozs Long grain rice
salt
2 Tbsps chopped, mixed Fresh herbs
freshly ground peppers
2 Tbsps lemon juice
1 Tbsp Hazelnut oil

Preparation steps

Rinse the zucchini flowers gently, pat dry and remove the pistils in the center.

Rinse the scallions, finely chop the whites and cut the greens into rings. Peel and finely chop the garlic. Briefly sauté the white scallions and garlic in hot oil, add the rice and sauté again. Add water (twice as much as the rice) and a little salt and simmer for about 20 minutes, until the rice is cooked. Add the scallion greens and the herbs, and season the mixture with salt, pepper, lemon juice and oil.

Fill the flowers with the rice mixture, twist the petals together gently and place in a greased steamer. Fill a pot with about 8 ounces of water and steam the zucchini flowers for 5-10 minutes.
