- ¾ inch fresh ginger (peeled)
- 1.333 cups dried Apricot
- 2 Tbsps caster sugar (fine)
Preparation steps
1.
Chop the ginger and put it into a pan with 2 1/2 cups water.
2.
Add the dried apricots and sugar. Bring to the boil, cover and simmer for 20 minutes until the apricots are tender.
3.
Pour the pan contents into a blender and whiz together until smooth. Strain into a jug and chill until needed.
