4 Tbsps olive oil
2 onions (thinly sliced)
3 cloves garlic cloves (sliced)
28 ozs canned Tomatoes
14 ozs Baked Ziti (or other tube pasta)
2 Tbsps chopped parsley
1 ¾ ozs Parmesan (grated)

Preparation steps

1.
Heat the oil in a large pan and gently cook the onion until soft but not brown.
2.
Add the garlic, cook for 2 minutes then add the tomatoes, season with salt and pepper and simmer very gently for 30 minutes, stirring from time to time.
3.
Meanwhile, cook the pasta according to the packet instructions. When it is cooked, drain well and stir into the sauce with the parsley.
4.
Serve with the grated parmesan sprinkled on top.
