2 shallots (finely chopped)
1 garlic clove
1 tsp sugar
4 Basil
18 ozs Spaghetti
½ Tbsp butter

Preparation steps

Place the tomatoes in a pot, cover them with water and bring to the boil. Allow to boil for about a minute then drain and puree the tomatoes.

Heat 3 tbsp oil in a pan and fry the shallots. Add the pureed tomatoes and the garlic. Cover and simmer for 2-3 minutes. Remove from the heat and season the sauce with salt, sugar and ground black pepper. Sprinkle the basil on top, cover and set aside.
3.
Cook the spaghetti in sufficient salt water until al dente. Drain (keep some of the water) and mix with the butter and 2-3 tbsp of the boiled water. Arrange on preheated plates, pour 3-4 tbsp over the top and serve immediately.
