8 thin Veal cutlets (600 grams)
1 Tbsp butter
1 Tbsp olive oil
8 Sage
8 slices Prosciutto
salt
freshly ground peppers
125 milliliters dry white wine
1 lemon (sliced)

Preparation steps

1.

Pound veal flat. Heat butter and oil in a pan and fry the sage leaves for 1 minute. Remove and pat dry.

2.

Place a prociutto slice and 1 sage leaf on each piece of veal and secure with toothpicks. Brown veal on each side for 2 minutes and season with salt and pepper.

3.

Keep veal cutlets warm. Deglaze pan drippings with the wine. Serve saltimbocca on a platter garnished with lemon slices. If desired, serve with a baguette.
