1 chicken
salt
1 untreated lemon
Sage
1 generous pinch ground paprika
1 pinch ground peppers
1 pinch Curry powder
1 generous pinch ground chili peppers (powder)
1 Tbsp honey
1 tsp hot Mustard
2 Tbsps Oil
1 beer can chicken holder (for use in the oven)
To garnish
Lemon wedge
Sage

Preparation steps

Wash the chicken in clear water, pat dry and salt the inside. Roughly dice the lemon and put inside the chicken with a few sage leaves. Close with toothpicks.

Lightly oil the chicken holder. Mix the paprika, pepper, curry powder and chilli with a little salt and sprinkle evenly over the outside of the chicken. Rub in well. Then place the chicken on the chicken holder (or on a spit).

Preheat the oven to 200°C with fan. Then place the chicken on the lowest shelf or the floor of the oven and cook for about 60 minutes (if it darkens too much, simply cover with a piece of aluminium foil). About half way through cooking time mix the honey smoothly with the mustard and oil and brush the chicken on all sides with the mixture. Continue cooking until the chicken is done.
4.
When done, take out of the oven and serve garnished with lemon wedges and sage.
