- ¾ cup Brown rice
- 3 Tbsps extra virgin olive oil
- 1 Lime (juiced)
- ½ tsp sugar
- 3 Tbsps cilantro (chopped)
- ½ tsp salt
- ½ tsp freshly ground Black pepper
- 2 sticks Celery (chopped)
- ½ Red onion (chopped)
- 1 can sweet Corn (kernels)
- 1 can red Kidney beans (drained)
- 1 can Tuna (in brine)
- 1 cup mixed salad
Preparation steps
1.
Cook the rice in boiling salted water for 45 minutes or according to pack instructions.

While the rice cooks mix all the dressing ingredients together with a fork and season to taste.
3.
Drain the rice in a sieve, rinse until cold under cold water. Drain again and empty into a bowl. Add the dressing, celery, onion, sweetcorn, kidney beans, tuna and salad greens and toss to mix.
