350 grams sugar
50 milliliters lemon juice
1 Cinnamon stick
1 Star anise

Preparation steps

Peel the quince and cut into eighths. Remove the flowers, core, and the stem. Place the pulp into a pot with 1 1/2 liters (approximately 1 1/2 quarts) of cold water, 100g (approximately 3 1/2 ounces) of sugar, the lemon juice, and star anise. Bring to a boil over medium heat. Reduce the heat and simmer for 1 hour until the fruit is soft.

Line a strainer with cheesecloth and place over a bowl. Pour the quince mixture through the cloth, making sure not to press down on the fruit. Boil the quince juice until you have about 1 l (approximately 1 quart) of liquid. Mix with the sugar, bring to a boil again, and divide into prepared bottles. Seal well and cool completely.
