1 Tbsp freshly chopped thyme
800 milliliters Vegetable broth
salt

1 Tbsp mild Curry powder
200 grams Sour cream (or crème fraîche)

Preparation steps

Dice pumpkin. Heat olive oil in a saucepan and saute in hot. Add thyme and broth, cover and simmer for about 30 minutes.

Puree pumpkin, season with salt, pepper and curry powder. Add sour cream and serve sprinkled with thyme leaves.
