1 kilogram potatoes
150 grams mixed Fresh herbs (such as dill, chervil, borage, parsley, chives, sorrel)
1 onion
4 egg yolks
300 grams Whipped cream
300 grams Yogurt (0.1% fat)
1 Tbsp lemon juice
salt
peppers
1 Romaine lettuce
For the garnish
Edible flowers (borage, sage ...)
scallions
egg yolks (cooked, chopped)

Preparation steps

1.

Rinse the potatoes and brush them thoroughly under running water. Then cook in salt water for about 35 minutes. Meanwhile, rinse the herbs, shake dry and very finely chop. Peel the onion and finely chop.

Mash the yolks with a fork finely and mix with sour cream and yogurt. Mix in herbs and onion and season with lemon juice, salt and pepper.

Divide the lettuce into leaves, rinse, spin dry and cut into strips.

4.

Drain potatoes, rinse briefly, peel and serve with herb sauce and salad on plates. Garnish to taste with edible flowers, chives and egg yolks.
