800 grams potatoes
10 centimeters Zucchini
¼ l water
1 Tbsp Vegetable broth
1 Tbsp Mustard
1 tsp Sambal oelek
3 Tbsps White vinegar
salt
5 Tbsps Corn oil
1 bunch parsley

Preparation steps

1.

Peel the potatoes, rinse and cook in salted water about 25 minutes, then strain, drain and while still warm cut into slices.

2.

Boil water, broth, mustard, sambal oelek, vinegar and oil, stir and season with salt.

3.

Mix the sauce with the potato slices and let infuse about 1 hour.

4.

Rinse zucchini and slice into very thin slices.

5.

Rinse the parsley, pat dry and finely chop the leaves.

6.

Fold zucchini and parsley into potato salad. Serve on lettuce leaves if desired.
