- 3 ½ ozs pearled Spelt
- 3 Tbsps extra virgin olive oil
- 1 Tbsp lemon juice
- ½ Tbsp white balsamic vinegar
- ½ Cucumber (thinly sliced and chopped)
- 7 ozs cherry Tomatoes (halved)
- 1 clove garlic cloves (finely chopped)
- 4 Chicory (endive)
- 3 Tbsps Cashews
- salt
- peppers
Preparation
Preparation steps
1.
Put the spelt into a pan and cover with water. Bring to a boil, reduce the heat and simmer for 20-25 minutes, until tender. Drain and rinse well

Put into a bowl and add the oil, lemon and vinegar, stirring well. Leave to cool.
3.
Add all the other ingredients and toss together. Season to taste with salt and pepper.
