1 Red onion (finely chopped)
6 eggs
3 cups frozen peas (thawed)
1 Tbsp chopped parsley
salt

2 Tbsps Oil

Preparation steps

1.
Heat the broiler (grill) to a medium setting. Heat the butter in a 15 cm/6" frying pan and gently cook the onion until soft but not brown.
2.
Lightly beat the eggs in a large bowl and add the cooked onions, peas and parsley. Season with salt and pepper.
3.
Wipe the pan with kitchen paper and add the oil. Heat until smoking then pour in the egg mixture. Cook gently until the eggs are nearly set then place under the grill until lightly browned.
4.
Serve garnished with arugula and a few peas.
